Home-burgers with vegetables in the oven

Remember my home-burgers? Or the delicious keftedakia? With the same way and the same unbeatable taste, but in a different shape, enjoy them today in the oven with potatoes, mushrooms and peppers.







So, in addition to the ingredients that you will find in the recipe for the home-burgers, get the following:
Ingredients
4-5 potatoes
1 green pepper
a few white mushrooms (paris)
salt, pepper, oregano, olive oil
juice of a lemon
Procedure
Start by putting in a big oven pan the potatoes (peeled and cut in thick slices), the mushrooms and the green pepper (also in slices). Add salt, pepper, oregano and olive oil.
 In a bowl, prepare the home-burgers and make them as shown in the photo below. Make space in between the vegetables and put the burgers. Add enough water to almost cover the potatoes and add the lemon juice all over. Cook in the oven at 180 degrees of Celsius for about 1h30min. If needed, at some point of the cooking, turn upside down the burgers to get a nice color all over.

Oh, Pancakes!

Starting the day with pancakes! Oh, my! Honestly, it is so easy that you can indulge your dear ones often with this... No need to count the ingredients, just improvise!


  



Mix a few eggs (like 2-3), milk (or yoghurt) and add enough flour (+some baking powder) to make a dough not too liquid not too think. For a special touch, choose a flavored yoghurt instead of milk and instead of plain flour add some part of corn flour. That's it!

Use a pan like the one for "crepes", oil it slightly and pour small doses of the dough and cook it in both sides.








Your pancakes are ready to enjoy using your imagination. I prefer good honey and cinnamon, up to you to decide for this :)

Croziflette, savoy specialty!

Croziflette today, a traditional french recipe and special tribute to the french region known for the Alpes mountains, Savoy! It's a twist from "tartiflette" that is made with potatoes, while this one is made with a special type of pasta that is called "crozet" that has the shape of tiny squares. It is not a dish that is low in calories, but it is a perfect dish for apres-ski after spending a full day in the slopes. So, ski maniacs all around the globe, this is for you :)
If you cannot find crozets, you can replace it with any small pasta.


Ingredients
400 gr crozets (better to mix half natural and half buckwheat)
1 big onion finely sliced 
200gr cured ham ("lardons")
300ml fresh butter cream
reblochon cheese
salt, white pepper, olive oil


Procedure
Boil the crozets in a big quantity of water as indicated in the box. Drain and empty in a medium pyrex.

Fry the onion with some olive oil and in the middle add the ham and continue until they all get a nice color.












Pour over the crozets, add the creme, the salt and the pepper and mix with a spoon.
 Cut the cheese in thick sliced and put evenly on top. Put in the oven in 180 Celsius for about 10min or until the cheese will create a nice crust on top. Serve with a green salad. Bon appetit!

Apple cake with coconut crust

Original cake today that brings together the apples and the coconut, with the latter one making a tasty crust over the apples. For the ones that like coconut, you will be thrilled with this combination!









 


Ingredients
Dough for the first layer:
120gr self-raising flour
100gr sugar
2 eggs
2 apples peeled and cut in small cubes
4 spoonfuls of milk
2 spoonfuls of butter or margarine

Dough for the second layer:
100gr of sugar
100gr of butter or margarine
1 egg
80gr noix de coco (or a bit more if you like too much coconut like me :)

Procedure


Mix the ingredients for the first layer well for a few minutes using a mixer. Pour in a buttered oven pan and bake in 180 degrees of Celsius and fan for about 15-20min or until it gets a nice golden color.




In the meantime, mix the ingredients for the second layer and when the first layer is done, pour fast the second layer and bake for 15 more minutes. Enjoy!!!

Vivian's chili con carne :)

After my tiramisu without coffee and alcohol, find today my way of chili con carne which is actually beef that flirts with "barbunya" beans.
You will need...

Ingredients
1 Kg of beef cut in small pieces
500gr of "barbunya" beans
1 garlic clover (smashed)
1 onion (sliced)
1 green pepper (sliced)
1 can of tomato sauce (or the equivalent in fresh tomatoes)
parsley
1 table spoon of paprika
salt, pepper, olive oil



Procedure

In a pressure cooker, fry the meat and at the end add the garlic, the onion and the pepper and fry for 2-3 more minutes. Add the beans, the tomato sauce, the parsley, the salt, the pepper and enough water to cover them all. Cover the pressure cooker and cook for about 30min or until the meat and the beans are soft enough. Food is ready!

Leek and celery caressing pork tenderloin!

Traditional greek recipe called "Hirino prasoselino", that combines the tasty pork tenderloin with the sweet leeks and the special touch of celery. Easy, simple and soooo nice...

Ingredients
1 or 2 pork tenderloins (some put also leg)
1 Kg of leeks
2-3 carrots
a few celery branches
salt, pepper, olive oil
lemon juice 
2 eggs (optionally)

Procedure
Wash the meat, the leeks, the carrots and the celery. Pat them to dry and cut the meat in slices, the leeks in 5cm parts and celery and carrots as you like :)
Fry the meat in some olive oil from both sides.
Add the leeks, the carrots and the celery, lower the fire and cover the casserole. Leave them to stew for 4-5 min but watch out that it won't burn. Leeks should diminish in volume and become softer.
Add water up to the middle. Finish with salt and pepper.
Cover and cook until the meat becomes soft. If you use a pressure cooker (my case) leave it for about 20min.
Serve it with fresh lemon juice. If you prefer a thicker sauce, beat the eggs with a fork, add the lemon juice and then add it to the food and leave it to boil for 2-3 more minutes. Bon appetite!
P.S: Sorry, but not many photos today, as it was boys that cooked it and I arrived only later to get 1-2 photos... Boys forgot to add carrots, which explains why there are no carrots in the photos :)))
