Best cinnamon rolls ever!

Want to try the BEST cinnamon rolls on the planet? Then you have to go to Iceland !
Or just try my

cinnamon rolls!


Just came back from a road trip to discover this beautiful country with the dramatic scenery and our eyes are full of majestic waterfalls, lava fields, startling geysers and so much more :)
But let's concentrate to cinnamon rolls today.

There are several quality bakeries (called "Bakari" in Icelandic) and the two best that I can definitely suggest to try are : Braud&co and Passion in Reykjavik. The first one had the best cinnamon rolls on earth!!! that they are caller "kanil snudur" in icelandic btw.
You can imagine my first thought coming back from my trip:

What a best way to start the new school year :)
Not to forget the lamb, btw. You have to try the lamb in Iceland... just delicious!
My favorite restaurant was outside of Reykjavik, close to Kerid crater: Þrastalundur.
I tried their lamb and family their pizzas ... best ever pizzas on earth too !!!

February 2 the day of crepes in France!

In France, February 2 (yesterday) is the day of crepes.
They call this day "Chandeleur" (Candlemas in english) and it is linked to religion (commemorate the purification of Virgin Mary and the presentation of baby Jesus)
but practically, people are making and consuming lots of crepes
You won't believe the amount of Nutella, and rest of ingerdients that are consumed those days.
As this is the weekend the closest to the Chandeleur, here's a recipe reminder to succeed your crepes and here is one for pancakes if you are too lazy for crepes :)

Happy Halloween!

What best to have fun ending of October than celebrating Halloween ?
Cooking, activities, decoration, colors... lots of ideas in the web! Just to keep track of what is in my blog let's recapitulate...


Have fun cooking butternut soups, halloween cookies, mini apple pies or just apple pie like this one, this one or this one.

Decorate your house entrance with jack-o-lanterns, following my son's short tutorial in the numbered photos (no1 is missing as it is about choosing your pumkin's face :)


Make fake injuries with makeup and scare your friends (not my favorite though!) like this homemade one from my kids...

Whatever you prefer, just try to get with friends and/or family and have fun and enjoy life!

Happy Easter 2017

Dear family, friends, acquaintances and just passengers from this blog,

I wish you all Happy Easter whatever that means for each one of you, if it means something.
Actually, I am so busy this period that I have realized just 2 days ago that Easter is this weekend :)
This blog proposes several traditional Greek recipes to prepare these days that each one reminds me of the Easter time that I have spent in Greece with my family at good and bad times.
I continue to prepare most of them for my subsequent family and I will be glad if my effort will help others to bring up memories from their youth in the same way or even better :) Cheers!

Feta cheese balls

Remember the recipe of feta cheese pies (tyropitakia)?
It's one of our favorite salty starters and if you have never tried it before this is the moment to do it!
I am giving you an alternative that is pretty simple, much simpler than the original recipe.
You just mix all the ingredients together using the kneader tool of your mixer and you just make small balls and bake exactly as in the original recipe. 
HUmmm, delicious!

Kmix cookies

My first chocolate cookies with my brand new Kmix are a pure success! Just try them... *yummy*

I have used first the "K" tool to beat the butter with sugar and eggs and then changed to the kneader tool as you can see in the photo to finish the final dough with flour and chocolate chunks.
I made about 30 delicious cookies.
Just play with baking time as depending on your flour it might vary slightly.
And if you want something exceptional in taste, just try my daughter's idea to make a cookie sandwich with ice-cream!!!

Zucchini muffins

Remember the delicious zucchini balls that I have presented a long time ago?
Discover today my personal touch to turn them to muffin-like starters in a xmas dinner that I have organized recently. They looked gorgeous and they tasted even better! Just try them...
Procedure
  • Use the same recipe for the filling and simply pastry dough (cut in disks) and assemble them in a muffins tray. 
  • Sprinkle on top with some yellow cheese. 
  • Bake for about 30min at 180 degrees of Celsius and fan.

Mosaic, recipe reminder!

Remember the recipe for mosaic? I have done it this weekend for my daughter that it's her favorite summer cake and I cannot describe you how much we love this classic recipe...
You have definitely to try it!
Improvement this time is that I have used a cute silicone mold that is great for this cake. No doubt I will continue to make in this one from now on :)

Summer time cooking!

Do you have a crave for a bbq?

Summer is the perfect time to indulge yourself with meat cooked over charcoal and everything that accompanies such a treat.

Approaching 15 of August that is a holiday in several places, I suggest the typical greek combination of souvlakia and tzatziki, and why not a greek salad that is an old-time classic.

Add some grilled vegetables like zucchini and eggplants that will not pass unnoticed for sure.

Recipe reminder (Tyropitakia)

I would like to remind you a salty greek recipe that I just cannot resist :
"Tyropitakia", the feta cheese pies!
If you haven't tried it yet, just do... if you have, just give me some feedback of what do you think of it or tell me your own recipe, if you like sharing :)
You can even offer them in a nice gift box to someone, to give you some ideas. I always do that, when I want to thank someone ...

Coconut "Ravani"




Ok, a difficult day for me (2 of may) has passed and life gets it's rhythm again. So, what's best than trying my favorite Greek cake? Coconut "Ravani" or Coconut semolina moist cake :)
Do you remember the recipe for ravani? If not, time to revise it ...
Find today a slightly different version that is one of my favorite Greek cakes with flaked coconut.


Ingredients1 cup of sugar
1 cup of self-raising flour + 1 teaspoon of baking powder
1 cup of semolina
1 cup of flaked coconut
6 eggs
1/3 cup of milk
For the syrup:
3 cups of water
2 cups of sugar
lemon zest
1 cup of butter

Procedure for the cake
Preheat the oven in air and 170 degrees of Celsius.
Whisk the sugar with the eggs until they get whiten and thick, adding little by little the milk. Mix in another bowl the rest of the ingredients  and add them slowly to the mixture.
Empty in an oven dish that you have buttered well before.
Bake for about 30-35min.
Cut it in medium diamond shaped parts. Leave it to cool and start preparing the syrup.

Procedure for the syrup
Boil all the ingredients in a small casserole apart from the butter for about 5-6min. At the end, add the butter and mix until it is melted completely and integrated in it.
Pour slowly on the cake all over until all the syrup is absorbed in the cake.

Add the extra flaked coconut on top to decorate the cake. Leave it to rest for a few hours, ideally serve it the next day.
Store it covered in the fridge. Every day that passes it gets even better, yummy :)

The muffins of the day!

These are the muffins of the day according to my recipe Vanilla muffins that is so easy to make and tasty too.
The inspiration of the day was to add some sliced almonds on top and decorated with a lollipop as they are going to be sold in my kids' school to finance a field trip....

Recipe reminder (spetzofai)

What have I cooked for yesterday? Spetzofai...
I had almost forgotten the impact that this dish has to my non-Greek friends, they become addicted! Reminder then for this heart-warm dish and special tribute today that is a pretty cold one and there is still snow around.

Recipe reminder

Have you seen my recipe for a "quiche"?
I have done it recently and I though to remind you of this easy and tasty solution for a starter.
This version is with feta, tomatoes and ham cubes and some grated yellow cheese.
But you can use whatever you have in the fridge in general...
Especially for John that tried it and liked it :)
