Zucchini and feta tarte

Here's a simple, light and tasty tarte for summer dinners...


Ingredients
2 medium zucchinis grated
1 onion minced
salt, pepper
2 spoons of frying oil (e.g., sunflower oil)
3 eggs
50cl of milk
250 gr feta cheese (smashed)
100 gr hard cheese grated (here I have used italian provolone)
1 round ready-made puff pastry

Procedure

  1. Peel off the zucchinis and grate them.
  2. Fry slightly the grated zucchini with the onion until it is quite smooth and most of it's water is evaporated. Season with salt and pepper.
  3. Beat the eggs, add all the rest of the ingredients.
  4. Lay the puff pastry in an tarte recipient for the oven (butter it or use the special baking paper).
  5. Empty the mix in the pastry and layer it with a spoon.
  6. Bake at 180 degrees and fan for about 20min or until it gets a nice golden color.
  7. Serve it with some tzatziki sauce and finish with a fresh fruits salad. Enjoy!

Summer time cooking!

Do you have a crave for a bbq?

Summer is the perfect time to indulge yourself with meat cooked over charcoal and everything that accompanies such a treat.

Approaching 15 of August that is a holiday in several places, I suggest the typical greek combination of souvlakia and tzatziki, and why not a greek salad that is an old-time classic.

Add some grilled vegetables like zucchini and eggplants that will not pass unnoticed for sure.

Tabbouleh, the healthy and so fresh salad!

I have recently discovered "Tabbouleh" salad and the whole family seems to appreciate a lot especially when temperatures rise a lot.
I did not have time to play much with recipes but I will share a photo of one of my first attempts and I will give you the general idea, as for salads you need to add your personal touch in my humble opinion ;)


  • The general idea is to use as basic ingredient the  bulgur  
  • that you soak for 1-2 hours in the same amount of water 
  • and then add your favorite ingredients for a fresh salad all chopped 
  • like tomatoes, onions, cucumber, parsley (I like to add also some dried raisins). 
  • Season with olive oil, lemon juice, salt, pepper and fresh mint
  • Cover and refrigerate. 
  • Serve with mint leaves on top.

Try it and I am sure that you will become addicted like we did!

Fruit salad, the best desert!

If you want to stay fit and eat healthy, if you are busy or lazy with cooking and do not want to try my delicious cakes, then the fruit salad is for you!
I use apples, pears, bananas and strawberries. You could add kiwis or any other fruit that you like. You just peel them, cut them pieces, present them in a nice way and your desert is ready in a few minutes.
If you want to add some exotic touch, pour some honey over them and sprinkle them with cinnamon. But we said that we will stay fit so simple today and then it's up to you for the rest. Enjoy!

"Skordalia", the greek puree

Find today a different way to make a potato puree, the greek way :) that has (what else?) olive oil and plenty of garlic. Beware, no romantic evenings that day ;)
Ingredients
4 potatoes
2 spoonfuls of apple vinegar
1/2 cup of olive oil
5 garlic cloves
some salt


Procedure
Boil the potatoes with the skin for about 30min or until they are soft enough (use a knife to test).
Then, peel off the potatoes and smash them slightly using a mixer. Add the salt, the smashed garlic and while mixing them, add little by little the olive oil until it gets a nice soft and glossy texture.  
Use it as a starter or to accompany meat or fish. Great combination is a traditional Greek dish that is called "mpakaliaros skordalia" that is actually fried cod fish with "skordalia" usually made on 25 of March, national day for Greece.
