Liver with Spätzle

Easy recipe, this one, for a fast and tasty dinner. The oregano and the lemon juice will make the liver sooo tasty that you will start dribbling from the smell...
In addition, for the ones that have open issues with their body iron like me, it will increase your iron intake.


Ingredients
500gr veal liver
500 gr Spätzle (type of an egg noodle)
salt, pepper, oregano, olive oil 
lemon juice

Procedure
You start by frying the noodles in a big frying pan with some olive oil. You add salt and when they are done (read the instructions on the package for the cooking time) take them out to a kitchen paper.



Then, you cut the livers in slices as in the photo and you start frying them.
Add salt, pepper and oregano and keep stirring to fry them homogeneously all over.
Finish by adding the lemon juice, cover and let simmer for 2-3 minutes.
Yous dish is ready!

Vivian's pudding

At Tyrnavos, a small greek town close to my hometown, they make a moist walnut cake that is covered with a thick cream and it is delicious. My mother discovered it when I was a small kid and adopted it as the main desert on special occasions. As we are close to Easter, I decided to propose you this "pudding" as we call it.
Rich in walnuts and syrup, perfumed with cinnamon and clove, looks gorgeous, I am sure it will become also your favorite desert :) Actually, by writing this, hubby enters at home and says... "what's smelling so great?" You see what I mean?

Ingredients
Cake
5-6 eggs (depending how big they are)
3/4 cup of sugar
3/4 cup of semolina
3/4 cup of grated walnuts
1 spoonful of brandy
1 baking powder
1 teaspoon of cinnamon
some clove powder

Syrup
1 cup of sugar
1 cup of water
vanilla

Cream
1/2 l of pastry cream 
1/2 l of whipped cream ("Chantilly")

Procedure
You have to prepare 3 things: the cake, the syrup and the cream.
For the cake, beat well the eggs with sugar. Mix separately the rest of the ingredients apart from the walnuts and add them to the eggs-sugar mix. Mix and add eventually the walnuts and mix again.
Empty the batter in a cake mold like in the photo that you have previously slightly buttered with a cooking brush. Bake at 175 degrees of Celsius and fan for about 30min. Take it out and leave it to cool completely.






Start preparing the syrup by boiling the ingredients all together for about 7-8 min.
When the syrup is done, pour it little by little on the cake and let the cake rest for several hours or better overnight.












The next day, take the cake out of the mold and prepare the cream.








We have to beat well fresh cream to make whipped cream. In a separate bowl we have to prepare the pastry cream. Either you make the recipe of pastry cream that you prefer (find mine here), either you buy the ready mix and add only the milk, follow the instructions and you cream is ready.












Mix well the two types of cream and pour it on top of your cake evenly.
Decorate with grated walnuts and cinnamon.
Cover it and leave it in the fridge for a couple of hours to allow all the scents to bloom.

Easter eggs

In several countries there is a custom to color the eggs for Easter. In Greece, where I come from, traditionally we color the eggs in red (representing the blood of Christ).
There is an interesting technique that I will try to show you today that uses leaves and flowers to make nice shapes in the eggs. I have learned it from my mother that is an expert.

The ones that I will show you here have been made from my kids. Actually, it is an amazing activity to do with kids. We were in an extreme hurry, though, as we had to attend a school show that one of my kids would participate, so do not be too hard on your criticism :)
Actually, I am proud for my kids as it needs quite some dexterity to make them...
Ingredients
eggs (as many as you like and preferably white ones)
250ml vinegar
some olive oil
leaves and flowers from your garden or the countryside (that have a nice shape)
egg coloring
old stockings (washed and dried :)
white thread




Procedure
Boil the eggs for about 8min. Leave them to cool down and then clean them with some vinegar and kitchen paper.
Cut the stockings in approximately 10cm parts.













Prepare the decoration by adding leaves and flowers around each egg and use the stocking parts to cover tight the egg.
Tight the thread around the stocking as shown in the photos.











Color the eggs according the instructions of the bought coloring.When the time of the coloring has elapsed, take the eggs out and let them dry.














Cut the stockings and shine the eggs using kitchen paper and olive oil.
Admire the result!
And what do we do with those eggs?
After the resurrection, we get each one an egg and hit each others egg and the one that ends with an unbroken egg is the winner/lucky one :)
Kids looove this part too :)))

Greek easter cookies

For Easter, in Greece, we make cookies that we call "koulourakia" and as Easter is approaching, find today the recipe that I like and I make together with my kids. It's so much fun for kids as they can use the dough as play-doh and use their creativity to shape the cookies. Even you will feel better after playing/doing these cookies :)
I will give you half of the dose that I made, as it makes so many cookies that fun will turn into torture otherwise :))))  

Ingredients
250gr of butter
1 cup of sugar
1 cup of white dry wine
1 cup of oil
2 egg yolks (+1 extra egg for the top)
3 teaspoons of baking powder
vanilla
1Kg of flour

Procedure
Leave the butter to soften either sometime outside of the refrigerator or in the microwave oven. In a big bowl, add the sugar and beat well with the mixer.
Add the egg yolks and beat again.
Add some flour and the rest of the ingredients and mix again.
Take away the mixer and continue to mix by hand adding slowly all the flour or as many until you have a nice soft dough that does not stick to your hands.






 

Time for fun now... gather your kids, your family, friends and start making various cookies according to your imagination...
See for yourself our creations :) 
Put the cookies in the oven trays using baking paper or butter.
Beat with a fork an egg and with a brush add a layer on the cookies.
Bake in the oven at 180 degrees of Celsius and fan. You can put up to 3 trays in the oven and change them levels to bake evenly all over.
Baking time depends on how thick are your cookies. Something like from 10 to 20 min. 





Store in a metallic recipient covered. You can add some Nutella on them, if you are fanatic with it like my kids and not only ;)
Make small packages and offer them to dear ones. Happy Easter!

Authentic, traditional recipe of Moussaka!!!

The one and only, the king of all the dishes... finally in this blog: Moussaka! Not so simple recipe, I admit it, but still soooooOOOOO delicious!!!
As you can find various versions that circulate on the internet, find today the most classic recipe which is the traditional greek one that is cooked at a greek home. Do not expect though to find the exact same one in a restaurant, even in Greece, as it quite tiresome the procedure.
So, the next time that someone is inviting you and propose moussaka, take it as a big treat! Unless you decide to cook it yourself, that's the only way that you can try the real moussaka.
The moussaka in the photos has been done while running up and down to the school of my kids, so it is not the best that I have done, but the taste is still unbeatable :)
So, lesson no1: Do it a day that you have plenty of time ...
Actually, there are 2 versions of moussaka in Greece, one with several vegetables, like I am cooking today here, and the other one using only eggplants. My mother is using only eggplants, so for me this is the best one :) but in order to cover both cases I am showing the first version.  

The procedure is similar to the pasticcio, only that you replace pasta with vegetables, mostly eggplants.
The dish is made from layers of fried vegetables that you alternate with sauce bolognese and finish on top with a bechamel sauce (white sauce).
Tip: If you want to gain time, make the tomato sauce days ago and store it in the freezer. Fry the vegetables the night before and let them take out the excess of the frying oil in a kitchen paper.

Ingredients

grated cheese (what ever you have available or like, here emmental and parmigiano )

Tomato sauce (Bolognese sauce)
700gr sliced meat of veal (I use actually half-half with porc but I insist on veal and not beef, trust me...)
3 red tomatoes or 1 can of tomatoes (have to be of excellent quality to have a tasty sauce!)
olive oil
garlic, onion, salt, pepper, parsley

Vegetables
2-3 eggplants
2-3 zucchini
3-4 potatoes
salt, frying oil

White sauce (Bechamel)
1 lt of milk
6-7 spoons of flour
salt, white pepper
2 spoons of butter
2 eggs

Procedure
You need to cook 3 things: a tomato sauce, fry the vegetables and white sauce (bechamel).

First start with the tomato sauce. Put in a casserole some olive oil, the sliced meat and the sliced garlic and onion. Fry them in high temperature and when done, add the sliced tomatoes, salt, pepper, sliced parsley and 1 cup of water. Cover and let simmer for about 30-40min or until you have a nice thick sauce.

In parallel, peel, wash, slice and salt the vegetables. Start frying them slightly little by little in a deep frying pan leaving the eggplants for the end and take them out in kitchen paper to absorb the excess of oil.













When done with frying, prepare the white or bechamel sauce. Put the milk in a small casserole and add the flour, salt, pepper, white pepper in low fire. Stir continuously until it starts to thicken. Take it out of fire and add first the butter and then the beaten eggs. Mix well.
Add 2-3 spoonfuls of the bechamel and some grated cheese in the tomato sauce and mix. 

Once you have all 3 parts, grease a deep baking dish and start assembling them.

Start with the potatoes that you put all over the bottom and add here and there some of the other vegetables.
Next, create a thick layer with the tomato sauce on top of the vegetables. You empty almost all the sauce except of 4-5 spoonfuls. Continue by creating a new layer on top adding the rest of the vegetables.
Finish by emptying on top the white sauce. Sprinkle some grated cheese and cook in the oven at 180 degrees of Celsius for about 20-30min or until it gets a nice golden color.
Invite your very best friends and share! Serve with a nice fresh green salad...

Mug cake, pleasure in a cup!

Are you in a diet, are you living alone or simply you are lazy and a big cake is not for you?
Discover the new trend: the MUG cakes!
Made inside a mug and cooked in a microwave oven in only a few minutes you can enjoy a chocolate cake. Sounds too good to be true, no?  And still, it is possible... Have a look for yourself. The result is quite impressive, at least for me. Would I replace my classic chocolate cake? Probably not... but still...


Ingredients
4 spoonfuls of self-raising flour
4 spoonfuls of sugar
1 spoonful of cocoa powder
1 egg
3 spoonfuls of milk
3 spoonfuls of oil or melted butter/margarine
some cinnamon

Procedure
Mix all the ingredients together.








Pour the batter in 2-3 mugs (in the photos, I have put all the batter in one mug to make the nice effect :) but it is way too much for one mug actually).






Cook in the microwave oven for about 2-3 min depending on how powerful is your oven.





 Decorate according to the occasion... here the birthday of this blog :)

Gateau au chocolat (with bananas?)



[UPDATED] Gateau au chocolat is the french chocolate cake that is more liquid in the center than a sponge cake. I started to make this cake for a friend that could not eat gluten and my kids loved it, so I keep doing it often :)
I update today this recipe by adding 2 sliced bananas and some cinnamon inside that I believe will add a sparkle to this recipe and change from the classic version. You can do the same by adding pears instead of bananas. Up to you ...
Once in a while, you have to play a bit with classic recipes, that's the fun with cooking :) 



Ingredients

200 gr of good dark chocolate

1 cup of sugar
125gr of butter
4 eggs
60 gr of all-purpose flour and 60 gr of corn flour (or 120gr corn flour for gluten-free)
1 baking powder
Extras : 2 bananas or pears and some cinnamon (all optional)

Procedure
Melt in the microwave oven the chocolate with the butter following the instructions of the chocolate.


Add the rest ingredients.

Mix well. If you want to add the optional ingredients, do it now and mix again.






Empty in a buttered 20 cm baking dish and bake at 170 degrees of Celsius for 20 min. Believe me, you will make a lot of happy people around you :)

Meat with pasta

Lazy cooking recipe but still delicious! You can cook easily in the oven any kind of meat with pasta in the following way:

Ingredients
any kind of your favorite meat red or white (like veal or chicken, but a part that is still adequate for the oven :)
2 tomatoes for the red meat, can tomato sauce for the white one
salt, pepper, oregano and olive oil
any kind of pasta that you like or is left in your cupboards :)






 



Procedure

Cut the meat in pieces and wash it. Put it in an oven dish with a cover, add the tomatoes in slices or the sauce on top, add the salt, the pepper, and the oregano.







Pour the olive oil (enough, like 1 cup!) and add water to almost cover the meat. Cover and bake for 1 hour or 45 min if it is chicken at 180 degrees of Celsius.








When the meat is quite soft (for red meat you have to verify with a fork), add the pasta all over (if it is spaghetti you have to break it in half) and bake for as long as suggested by the pasta box.
 
Serve with some grated parmiggiano reggiano cheese on top (or whatever else you like or have :)
